Please accept my apologies for turning on the system so late this week. Usually the system is activated on Saturday evenings. Well, sometimes life happens, and our normal schedules break down. It’s summertime! Summer is my favorite time of the year. My reasons for loving summer are many: school is out, the dress code at work is relaxed, skies are blue, grass is green, and best of all – it’s tomato season. REAL tomatoes, not the sad red balls you can buy at the store that lack flavor and proper texture. What is more sublime than a juicy tomato sandwich made with white bread and mayonnaise? So simple, yet so delicious. Another summer treat is caprese salad – sliced tomato, fresh mozzarella, shredded basil, and balsamic vinegar, crowned with a tiny sprinkle of kosher salt. Absolute salad perfection! Don’t mind me… I’ll just relax on the porch and keep dreaming of ways to use tomatoes!

While some people view Memorial Day as the “unofficial” start of summer, others recognize the true meaning of this national holiday. Memorial Day is the holiday that takes place annually on the last Monday in May, and is a dedicated day for honoring U.S. military personnel who have died while serving in the United States armed forces. More than 1.3 million Americans paid the ultimate sacrifice for their nation. Let us pause to remember them.
